Residential kitchen appliances at real cabinet dimensions: 24in dishwasher, 30in range and cooktop, 36in refrigerator. Those numbers are the reason to use a block instead of a rectangle, since a kitchen plan is a cabinet module problem before it is anything else.

Kitchens are laid out in cabinet modules, and every appliance in this 22-block category is sized to one. The residential pieces are the 24 in dishwasher, 30 in range, cooktop and wall oven, a 36 in refrigerator opening, a microwave, pantry shelving and an island. The commercial side adds a fryer, griddle, 36 in range, reach-in refrigerator, dish machine, prep tables, a pass shelf, a bar counter with stools, and 96 in walk-in cooler and freezer boxes. The architect or kitchen designer draws them on the floor plan and enlarged kitchen plans, generally on A-EQPM or A-FLOR-APPL, while a food-service consultant uses a separate Q-EQPM equipment layer on commercial jobs.
In a house, the refrigerator block is 36 x 30 in, the range 30 x 25 in and the dishwasher 24 x 24 in. The island defaults to 84 x 36 in with an overhang parameter for seating. The National Kitchen and Bath Association recommends work aisles of 42 in for one cook and 48 in for two, and a 36 in walkway where no one works. Set the island from the counter face, not the cabinet back.
Commercial kitchens are governed by the health department, NFPA 96 and the exhaust hood. Line the cooking equipment under a hood, fryer at 16 x 30 in, griddle and range at 36 in, and remember NFPA 96 wants 16 in between a fryer and an adjacent open flame or a steel baffle between them. The walk-in cooler inserts at the outside face of the panel, so its 96 in dimension is the box you coordinate with the building.
Each appliance inserts at back-center on the wall line. That lets you snap every piece to the same back wall and slide it along without changing depth. For an island, the datum is the footprint center because it has no back face. Bar stools are drawn at 24 in pitch on the bar counter block; change the pitch rather than copying stools by hand, and the accessible part of the bar still has to meet 2010 ADA Standards dining-surface height of 28 to 34 in.

Plan for a 36 in opening. The refrigerator block is 36 x 30 in, with width adjustable from 30 to 42 in and depth from 28 to 34 in. Counter-depth units sit near the cabinet face; standard-depth units project past it, so match the specified model's depth before dimensioning aisles.
NKBA guidelines recommend 42 in between counters or an island for one cook and 48 in for two, and 36 in where a path is only a walkway. Measure from counter face to counter face, including any handles, not from the cabinet backs, and allow for the dishwasher door to drop open.
The walk-in cooler block defaults to 96 x 96 in and the walk-in freezer to 96 x 72 in, each adjustable from 72 to 144 in. The cooler's datum is the outside face of the insulated panel, so the block size is the footprint you coordinate with walls, slab recess and refrigeration lines.
